How do you quantitatively estimate soreness and fatigability?

Hi Vasileios,
A large number of clubs will use a short wellness questionnaire at the beginning of each day. This will usually include a number of questions including soreness and fatigue/sleep quality. Although there is no set way of calculating this most team will use a 10 point scale with 10 being perfect and 1 being terrible. Unfortunately, I'm not sure of the exact method which John or Tom uses currently but I'd highly recommend checking out page 37 of Dr Robin Thorpe's thesis available at http://researchonline.ljmu.ac.uk/id/eprint/4517/2/158299_THORPE%202015%20PHD%20THESIS%20FINAL%20MANUSCRIPT.pdf for a review in this area.
